人妻厨房 – Morton’s Chocolate Soufflé 舒芙蕾

情人节一定要去餐厅花大钱享受浪漫吗? 在家其实自己动手做大餐不但有心意也有情调噢!今天爱咪要跟大家知名牛排馆Morton’s的著名甜点Chocolate Souffle巧克力舒芙蕾食谱!

Soufflé au Chocolat

Serves 4 四人份

Ingredients:
3 tablespoons unsweetened cocoa powder
1 tablespoon all-purpose flour
2 teaspoons cornstarch
1 cup cold whole milk
4 large egg yolks, plus 8 large egg whites (1 1/4 cups), at room temperature
1/2 cup granulated sugar, plus additional for the soufflé dishes
2 teaspoons unsalted butter, at room temperature
Confectioners’ sugar for dusting
2 tablespoons finely chopped bittersweet or semisweet chocolate (1 ounce)

材料:
无糖可可粉……….3匙
中筋面粉…………………1匙
玉米淀粉…………….2茶匙
冷的全脂牛奶……………1杯
蛋黄(大)………………….4个
蛋白(大)………………….8个 (1 1/4杯) 室温
砂糖………………………1/2杯 (还要少许要装饰用)
无盐奶油………………..2茶匙 室温
有加玉米粉的精细糖粉
细切的苦甜巧克力 或 半甜巧克力……….1盎司

做法:

1. In a small bowl, whisk together cocoa powder, flour and cornstarch. Stir in 1/3 cup of the milk and mix well. Set aside.
将巧克力粉、面粉还有玉米淀粉在小碗里混合;慢慢地加入1/3杯的牛奶并搅拌混合好;先放在旁边

2. In a medium saucepan, heat the remaining 2/3 cup milk over medium heat until steaming hot but not boiling. Cover and set aside.
将剩下的2/3杯牛奶倒入中型炖锅,用中火烧热,注意只要热到有蒸气冒出而不要滚烫,关火,盖住放旁边

3. Meanwhile, in the top of a double boiler over gently simmering water, whisk the egg yolks and 2 tablespoons of the granulated sugar for about 2 minutes or until the sugar dissolves and the mixture is deep golden yellow and foamy. (The temperature should be between 105 and 110 F)
用两个锅子,下面烧热水到温度105到110F度之间,让蒸气热上面的锅,同时上面的锅加入蛋黄以及2匙的砂糖,搅拌2分钟或是直到糖完全溶解,这时呈现的状态会是深黄色泡状体!关火(时间不宜过久,水也不能太热,不然蛋就会煮熟啦 XD)

4. Add the hot milk, alternating it with the cocoa mixture. Whisk just to blend and the return the mixture to the saucepan that held the milk. Over low heat, cook the mixture for 1 1/2 to 2 minutes, whisking vigorously, until smooth and thick.
爱咪我的方式是:先将步骤2的牛奶跟步骤1的巧克力混合粉搅拌混匀之后,再加入步骤3的糖蛋浆里;在中型炖锅中用很小的火煮混合物1分半至2分钟,要使劲地的搅拌一直到变得滑顺秾稠

5. Remove the pan from the heat. Using a handheld mixer (you may do this in a standing mixer if you don’t have a handheld mixer), beat for 2 minutes. Add the butter, 1/2 teaspoon at a time. Blend the pudding well after each addition. Scrape the pudding into a mixing bowl. Generously dust the surface with confectioners’ sugar. Cover loosely and set aside for 30 minutes.
将中型炖锅移开热源;用手提搅拌机再搅拌2分钟(如没有手提的也可以用直立式搅拌机);以每一次半茶匙的份量加入奶油,每一次加入奶油都要将其搅拌均匀,这个时候混合物的样子会像布丁一样;混合完成后,把布丁体刮进一个搅拌盆;在表皮上撒上大量的有加玉米粉的精细糖粉(Confectioners’ sugar);搅拌盆黏上保鲜模,放旁边等30分钟

6. Preheat the oven to 375 F. Put the oven rack in the lowest position.
预热烤箱到375F华氏 (将烤架放到最低的位置) 然后煮一些之后要将舒芙蕾热水澡的水

7. Generously butter two 3 1/2 cup soufflé dishes and sprinkle each dish with 2 teaspoons of granulated sugar, taking care to coat the sides and bottom completely.
用奶油在两个 三杯半大小的舒芙蕾模或是任何直筒状杯子的内侧整个大量涂抹过,然后将两茶匙的砂糖将舒芙蕾模两边还有底层整个洒满

8. In the bowl of an electric mixer fitted with the whisk attachment and set on high speed, whisk the egg whites for 30 seconds until foamy. Slowly add the remaining 6 tablespoons of granulated sugar and whisk for about 90 seconds or until the egg whites form semi-stiff peaks and appear glossy and tender. Do not over mix the egg whites; they should not be grainy or dry looking or the soufflé may not rise properly.
