人妻廚房 – Morton’s Chocolate Soufflé 舒芙蕾

情人節一定要去餐廳花大錢享受浪漫嗎? 在家其實自己動手做大餐不但有心意也有情調噢!今天愛咪要跟大家知名牛排館Morton’s的著名甜點Chocolate Souffle巧克力舒芙蕾食譜!

Soufflé au Chocolat

Serves 4 四人份

Ingredients:
3 tablespoons unsweetened cocoa powder
1 tablespoon all-purpose flour
2 teaspoons cornstarch
1 cup cold whole milk
4 large egg yolks, plus 8 large egg whites (1 1/4 cups), at room temperature
1/2 cup granulated sugar, plus additional for the soufflé dishes
2 teaspoons unsalted butter, at room temperature
Confectioners’ sugar for dusting
2 tablespoons finely chopped bittersweet or semisweet chocolate (1 ounce)

材料:
無糖可可粉……….3匙
中筋麵粉…………………1匙
玉米澱粉…………….2茶匙
冷的全脂牛奶……………1杯
蛋黃(大)………………….4個
蛋白(大)………………….8個 (1 1/4杯) 室溫
砂糖………………………1/2杯 (還要少許要裝飾用)
無鹽奶油………………..2茶匙 室溫
有加玉米粉的精細糖粉
細切的苦甜巧克力 或 半甜巧克力……….1盎司

做法:

1. In a small bowl, whisk together cocoa powder, flour and cornstarch. Stir in 1/3 cup of the milk and mix well. Set aside.
將巧克力粉、麵粉還有玉米澱粉在小碗裡混合;慢慢地加入1/3杯的牛奶並攪拌混合好;先放在旁邊

2. In a medium saucepan, heat the remaining 2/3 cup milk over medium heat until steaming hot but not boiling. Cover and set aside.
將剩下的2/3杯牛奶倒入中型燉鍋,用中火燒熱,注意只要熱到有蒸氣冒出而不要滾燙,關火,蓋住放旁邊

3. Meanwhile, in the top of a double boiler over gently simmering water, whisk the egg yolks and 2 tablespoons of the granulated sugar for about 2 minutes or until the sugar dissolves and the mixture is deep golden yellow and foamy. (The temperature should be between 105 and 110 F)
用兩個鍋子,下面燒熱水到溫度105到110F度之間,讓蒸氣熱上面的鍋,同時上面的鍋加入蛋黃以及2匙的砂糖,攪拌2分鐘或是直到糖完全溶解,這時呈現的狀態會是深黃色泡狀體!關火(時間不宜過久,水也不能太熱,不然蛋就會煮熟啦 XD)

4. Add the hot milk, alternating it with the cocoa mixture. Whisk just to blend and the return the mixture to the saucepan that held the milk. Over low heat, cook the mixture for 1 1/2 to 2 minutes, whisking vigorously, until smooth and thick.
愛咪我的方式是:先將步驟2的牛奶跟步驟1的巧克力混合粉攪拌混勻之後,再加入步驟3的糖蛋漿裡;在中型燉鍋中用很小的火煮混合物1分半至2分鐘,要使勁地的攪拌一直到變得滑順穠稠

5. Remove the pan from the heat. Using a handheld mixer (you may do this in a standing mixer if you don’t have a handheld mixer), beat for 2 minutes. Add the butter, 1/2 teaspoon at a time. Blend the pudding well after each addition. Scrape the pudding into a mixing bowl. Generously dust the surface with confectioners’ sugar. Cover loosely and set aside for 30 minutes.
將中型燉鍋移開熱源;用手提攪拌機再攪拌2分鐘(如沒有手提的也可以用直立式攪拌機);以每一次半茶匙的份量加入奶油,每一次加入奶油都要將其攪拌均勻,這個時候混合物的樣子會像布丁一樣;混合完成後,把布丁體刮進一個攪拌盆;在表皮上撒上大量的有加玉米粉的精細糖粉(Confectioners’ sugar);攪拌盆黏上保鮮模,放旁邊等30分鐘

6. Preheat the oven to 375 F. Put the oven rack in the lowest position.
預熱烤箱到375F華氏 (將烤架放到最低的位置) 然後煮一些之後要將舒芙蕾熱水澡的水

7. Generously butter two 3 1/2 cup soufflé dishes and sprinkle each dish with 2 teaspoons of granulated sugar, taking care to coat the sides and bottom completely.
用奶油在兩個 三杯半大小的舒芙蕾模或是任何直筒狀杯子的內側整個大量塗抹過,然後將兩茶匙的砂糖將舒芙蕾模兩邊還有底層整個灑滿

8. In the bowl of an electric mixer fitted with the whisk attachment and set on high speed, whisk the egg whites for 30 seconds until foamy. Slowly add the remaining 6 tablespoons of granulated sugar and whisk for about 90 seconds or until the egg whites form semi-stiff peaks and appear glossy and tender. Do not over mix the egg whites; they should not be grainy or dry looking or the soufflé may not rise properly.
